The <strong>brocciu <\/strong>can also be matured and dried for several weeks. <strong>Brocciu Passu<\/strong>which will be a little harder, between <a href=\"\/en\/corsican-cheese\/\">the cheese<\/a> and the <strong>brocciu<\/strong>with a saltier taste.<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<div class=\"flex-video flex-video-youtube\"><iframe loading=\"lazy\" title=\"Brocciu: a Corsican speciality\" width=\"1060\" height=\"596\" src=\"https:\/\/www.youtube.com\/embed\/qprnYW-tLuI?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/div>\n<\/div><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Its best tasting period is from November to June.<\/em>. It is generally drunk at the end of a meal (sweetened with a drop of brandy).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Every year, it is one of the star products at the Foire du Fromage (<em>Fiera di U Casgiu<\/em>) from Venaco.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le <strong>brocciu <\/strong>is used in many Corsican dishes, including pulenda, omelettes, cannelloni and stuffed vegetables.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is also the basis of many pastries:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Frittelle <\/strong>and manfare or manfarone di brocciu, (brocciu fritters),<\/li>\n\n\n\n<li><strong>Migliacciu<\/strong> (leavened wheat flour pastry with eggs and fromage frais or brocciu),<\/li>\n\n\n\n<li><strong>Fiadone<\/strong> a traditional Bastia dessert,<\/li>\n\n\n\n<li><strong>Imbrucciate<\/strong> patisserie ajaccienne<\/li>\n\n\n\n<li><strong>Falculelle <\/strong>Corten speciality.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Brocciu and PDO<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Brocciu <\/strong>is the only product from Corsica's livestock sectors to be covered by the<strong>certification. <\/strong>It benefits from a<strong> Protected Designation of Origin (PDO) since 1998.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Syndicat A.O.C. Add salt and pepper to taste.<br>Add the mint, cut into thin strips. Heat a frying pan with olive oil. Once the pan is hot, pour in the mixture.<br>Cook over a medium heat and serve the omelette slushy and lightly browned.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Fiadone according to Mrs Tamagna's recipe<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Cake made with <strong>Brocciu <\/strong>:<br>Preparation time: 5 min<br>Cooking time: 45 min<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients (Serves 6) :<br>4 whole eggs<br>1 250 g brocciu<br>200g sugar<br>4 whole eggs<br>1 lemon, grated<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To make: Mix all the ingredients in a large bowl using a mixer. Butter a 20 cm diameter cake tin and spread out the mixture.<br>Bake in the oven at gas mark 6 for 45 min.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Courgettes with Brocciu<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Preparation time: 15 min<br>Cooking time: 15 min in a very hot oven<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients (serves 5)<br>5 courgettes<br>1 brocciu 500g<br>2 eggs<br>100g chard a few basil leaves<br>4 slices of sandwich bread<br>50 cl milk, breadcrumbs, salt, pepper<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a pan of boiling water, blanch the courgettes and cook the chard (2 to 3 minutes). Cut the courgettes in half lengthways and core them. Crumble the sliced bread and soak in the milk until completely absorbed. Mix the <strong>brocciu <\/strong>with the beaten eggs, then add to the soaked sandwich bread. Chop the chard and basil leaves and add to the egg mixture. <strong>brocciu<\/strong>. Mix well with your hands. Stuff the courgettes with the aubergine mixture. <strong>brocciu<\/strong>Sprinkle with breadcrumbs. Bake in a hot oven (gas mark 7) for 15 minutes.
